

El Pollo Loco Chicken
Ingredients
- 4 Pounds Chicken Pieces
- Tablespoons Lime Juice
- 3/4 Cup Pineapple Juice
- 1 Tablespoon Vinegar
- 1/2 teaspoon Dried Oregano
- 1/2 teaspoon Salt
- 1/8 teaspoon pepper
- 1/4 teaspoon Chili Powder
- 2 Minced Garlic Cloves
- 1 Tablespoon Olive Oil
- 8 to 10 Drops Yellow Food Coloring
Directions
In a large shallow pan combine all the ingredients, cover and marinate several hours or overnight. Remove chicken from marinade and cook over medium coals on barbecue grill, flipping about every 12 minutes – about 4 times until charred on both sides and meat is done (165 degrees internally). Serve with beans and rice, corn or flour tortillas, and fresh salsa.
